4th of July Weekend

Happy 4th of July!

After quite a long work week, I was looking forward to finally having a 3 day weekend to refresh. My boyfriend I decided it would be fun to plan a last minute day trip to Old Town Spring, Texas, which is north of Houston. On Saturday morning I got up early and prepared an egg white omelette plus a road trip snack, light popcorn with mixed nuts and fruit with a dash of pumpkin spice.


The transition from Houston to a small town is quite abrupt near Old Town Spring. Once you arrive you find yourself quite confused, because it seems like you are in a whole other world. We got there a little early so we decided to grab some breakfast at Ellen’s Cafe on Midway Street. Suddenly I felt as if I were back in my quaint hometown. The cafe smelled of waffle cones which made us hungry instantly, so we ordered the Breakfast Quiche with spinach and chicken. The food  was so delicious! The prices were very fair as well. I definitely recommend stopping by this cafe for a no fuss experience, because personally I’m not a big fan of crowded chain diners, I prefer places that are a little rough around the edges and have their own unique charm. The staff here was so friendly, even the cook came out to check on the patrons.



After we had our meal we started venturing around the eclectic town. We were very surprised by the number of little shops they had, all with their own unique themes and inventory. My mom is actually a huge fan of antiques so the next time she visits from Pennsylvania I will be sure to take her to this town. The pictures alone were enough to convince her!

After visiting numerous shops, we decided it was time to hit the road. I was quite pleased with the jewelry, picture frame, and a book from the used book store (dress I got in Rice Village back home). For the 4th of July we planned to have our friends over for a cookout so I figured it’d be fun to visit a farm to pick our own produce. There happens to be one a short distance from Old Town Spring so we made our way to Atkinson Farms for some tomato picking. We kept it short simply because of the blazing Texas heat, but we definitely saved money compared to what we would pay at our local H-E-B or Randalls grocery store.


Overall, we had a great time in Old Town Spring, and I would recommend checking it out if you ever find yourself near Houston with a sudden need for some quiet.

Sunday morning I just took it easy, drank some coffee as I watched Gilmore Girl re-runs. My boyfriend is a bio-medical engineer PHD student so he went off to the lab pretty early, while I decided to workout before spending the rest of the day poolside with a book. I have really been pushing myself to workout more. Not so much in the interest of being what people deem as ‘skinny,’ but more towards building a healthier lifestyle. It’s my goal to be one of those people that eventually ‘love’ working out. Of course I am not going to expect a miracle overnight. I am just going to take my fitness journey one day at a time and not compare my progress with anyone else, because that doesn’t ever help anyone! My current workout routine consists of using the treadmill and bike at the gym, Blogilates and some yoga videos I found on YouTube. Hopefully as I become stronger I will be able to try some new fitness routines. Let me know if you have any fitness recommendations!

On July 4th, I spent time with my boyfriend and prepared some healthy meals and snacks that I’ll be sharing in another blog post soon! Later that day we prepared for our friends arrival and ventured out to the pool to find an open grill (a very challenging task in my apartment complex). Finally we located one, and my grilled some shrimp, pork, beef, corn, and baked potatoes. After our meal we made our way to the rooftop to enjoy multiple firework displays going on around the city. The fireworks were far away, but it was definitely worth it to just enjoy the fireworks from the comfort of our own home, because Houston traffic is no joke!
